Just In: Goodbye Horses To Open New Wine Bar and Bottle Shop in Islington This December

Stable Wines will take over a former bank vault on Essex Road, selling toasties and wine to drink in and take away, as well as hosting wine tastings.

The duo behind De Beauvoir favourites Goodbye Horses, The Dreamery and Day Trip will open a new neighbourhood wine bar and bottle shop on nearby Essex Road this December.

Set in a former bank vault, George de Vos and Alex Young’s fourth playful, design-led concept, Stable Wines, will spotlight small-batch, natural and progressive labels curated by wine director Nathalie Nelles (ex-Noble Fine Liquor). The venue will be overseen by general manager Fred Clelland.

A ground-floor shop will sell bottles to drink in or take away, while downstairs candlelit arches, oak panelling and banquette seating will set the tone for an intimate subterranean bar and a private dining room for six.

There won’t be a full kitchen, meaning concise menu centred around ethically sourced charcuterie, cheese and Goodbye Horses’s signature toasties. The new spot will also host educational wine tastings showcasing pours by leading and lesser-known low-intervention producers.

Stable Wines also continues de Vos and Young’s exploration of how art, design and hospitality can intersect. As with their previous projects, the design has been led by the founders themselves. The vault’s original iron railings will remain in situ, while volcanic stone from Mount Etna and oak counters matching those at Goodbye Horses will be used across the space. Plus, artist Lucy Stein – who worked on the colourful, whimsical scenes on the ceiling at The Dreamery – has created new murals for the space.

Stable Wines opens December 1 at 207 Essex Road, N1 3PH.
